Ingredients

Scale
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (115 g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (120 ml) ripe mango puree (fresh or frozen, thawed)
  • 1 tablespoon fresh lime juice (about 1 lime)
  • Zest of 1 lime (finely grated)
  • 3/4 cup (95 g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Zesty Glaze:
  • 1 cup (120 g) powdered sugar, sifted
  • 2 tablespoons fresh lime juice
  • 1 teaspoon finely grated lime zest
  • 1 teaspoon mango puree (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Melt the butter gently in a microwave-safe bowl or over a double boiler. Let it cool slightly.
  3. In a large bowl, whisk together sugar and melted butter until fully combined and glossy, about 1-2 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract, mango puree, fresh lime juice, and lime zest until fragrant and bright yellow-orange.
  5. In a separate bowl, sift together flour, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Stop as soon as no flour is visible; do not overmix.
  7. Pour the batter into the prepared pan and smooth the top with a spatula. Tap the pan gently to release air bubbles.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Avoid overbaking to keep brownies fudgy.
  9. While baking, prepare the glaze by whisking powdered sugar with lime juice, lime zest, and optional mango puree until smooth and pourable. Adjust consistency with more lime juice if needed.
  10. Let the brownies cool in the pan for about 15 minutes, then drizzle the glaze over the warm brownies. Allow glaze to set for 20 minutes before slicing.

Notes

Use ripe mangoes for best flavor; if using frozen mango puree, thaw and drain excess liquid to avoid soggy brownies. Do not skip lime zest for essential oils and brightness. Avoid overmixing flour to keep texture light and moist. Adjust glaze thickness with lime juice. Let glaze set on warm brownies for a glossy finish.
