  • 23 drops green food coloring (or 1/4 teaspoon matcha powder for natural color)
  • 1 tablespoon mini chocolate chips (optional)
  • Whipped cream (for topping)
  • Festive sprinkles (optional)

Instructions

  1. Gather all ingredients and equipment. Measure everything before starting.
  2. Add flour, cornstarch, sugar, baking powder, and a pinch of salt to a microwave-safe mug (10–12 oz capacity). Stir until evenly combined.
  3. Add milk, vegetable oil, vanilla extract, and peppermint extract. Mix until the batter is smooth and no dry pockets remain.
  4. Add green food coloring (or matcha powder) and stir until color is even. Fold in mini chocolate chips, reserving a few for topping if desired.
  5. Microwave on high for 60–75 seconds, until the cake is puffed and just set on top. If needed, add 10–15 seconds for lower wattage microwaves. Watch closely to prevent overflow.
  6. Let the mug cake cool for 1–2 minutes. Top with whipped cream, extra chocolate chips, and festive sprinkles.
