A vibrant, festive fruit platter arranged in rainbow order and served with a creamy Greek yogurt dip. Perfect for St. Patrick’s Day parties, brunches, or any occasion that calls for a healthy, crowd-pleasing snack.

  • 1 cup strawberries, hulled and sliced
  • 1 cup mandarin oranges, peeled and segmented
  • 1 cup pineapple chunks
  • 1 cup green grapes, halved
  • 2 kiwis, peeled and sliced
  • 1/2 cup blueberries
  • 1/2 cup red grapes, halved
  • Optional: blackberries or purple plums for extra color
  • 1 cup (8 oz) Greek yogurt, plain or vanilla
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 tsp lemon zest (optional)
  • Pinch of salt
  • Optional garnishes: fresh mint leaves, edible gold sprinkles

Instructions

  1. Wash all fruit thoroughly under cold water and pat dry with paper towels.
  2. Hull and slice strawberries. Peel and segment mandarin oranges. Cut pineapple into bite-sized chunks. Halve grapes and slice kiwi. Set blueberries and optional blackberries aside.
  3. Arrange fruit in rainbow order on a large serving platter: strawberries (red), oranges (orange), pineapple (yellow), green grapes and kiwi (green), blueberries (blue), red grapes or blackberries (violet). Layer fruits in neat arcs or rows, overlapping slightly.
  4. In a small mixing bowl, combine Greek yogurt, honey, vanilla extract, lemon zest (if using), and a pinch of salt. Whisk until smooth and creamy. Taste and adjust sweetness if needed.
  5. Spoon the yogurt dip into a small serving bowl and place it in the center or edge of the platter.
  6. Garnish the platter with fresh mint leaves and edible gold sprinkles if desired.
  7. Serve immediately, chilled. If prepping ahead, store fruit and dip separately and assemble just before serving.

Notes

For best results, use ripe but firm fruit and pat dry before arranging. Chill fruit and dip before serving for maximum freshness. Easily adapt for vegan or dairy-free diets by using coconut yogurt and maple syrup. Assemble just before serving to keep fruit vibrant and crisp.
