Savory Super Bowl Nacho Dip

This double-layer nacho dip is a crowd-pleasing, cheesy, and hearty snack perfect for game day, potlucks, or family gatherings. Layers of seasoned beef, creamy refried beans, melty cheese, and salsa make every bite irresistible.

  • 1 pound ground beef (85% lean preferred)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet (about 1 oz) taco seasoning (or homemade: 1 tsp chili powder, 1/2 tsp cumin, 1/4 tsp smoked paprika, salt & pepper to taste)
  • 1/3 cup water
  • 1 can (16 oz) refried beans
  • 1/4 cup sour cream (or Greek yogurt)
  • Pinch of salt
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese (or mozzarella)
  • 1 cup chunky salsa
  • 1/4 cup sliced green onions (optional garnish)
  • 1/4 cup chopped fresh cilantro (optional garnish)
  • 1 medium tomato, diced (optional garnish)
  • Sliced black olives or pickled jalapeños (optional garnish)
  • Tortilla chips, for serving
  • Extra sour cream or guacamole, for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch (or similar) oven-safe baking dish.
  2. In a large skillet over medium heat, cook ground beef and diced onion for 4-5 minutes, breaking up the beef until mostly browned. Add minced garlic and cook for 1 more minute.
  3. Add taco seasoning and water to the skillet. Stir to coat evenly and simmer for 2-3 minutes until thickened. Taste and adjust seasoning if needed. Remove from heat.
  4. In a medium bowl, mix refried beans, sour cream, and a pinch of salt until smooth. Add a splash of water if too thick.
  5. Spread the creamy bean mixture evenly in the bottom of the prepared baking dish.
  6. Top with the seasoned beef and onion mixture, spreading to the edges.
  7. Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the beef layer.
  8. Spoon salsa on top and gently spread for even coverage.
  9. Bake for 18-20 minutes, until cheese is bubbling and golden. For a crispier top, broil for 2-3 minutes at the end, watching closely.
  10. Remove from oven and let cool for 5 minutes. Garnish with green onions, cilantro, diced tomato, and any other desired toppings.
  11. Serve hot with sturdy tortilla chips and extra sour cream or guacamole if desired.

Notes

For a vegetarian version, use plant-based crumbles or sautéed mushrooms and peppers instead of beef. For extra creaminess, mix in cream cheese with the beans. Assemble ahead (without cheese and salsa) and refrigerate up to 24 hours. Use sturdy chips for serving. For gluten-free, check labels on taco seasoning, beans, and chips.
