This creamy, cheesy bacon spinach dip is the ultimate crowd-pleaser for Super Bowl parties and gatherings. Packed with smoky bacon, fresh spinach, and a blend of melty cheeses, it’s quick to make and guaranteed to disappear fast.

  • 8 slices bacon, cooked and crumbled
  • 4 cups fresh spinach (about 120g), roughly chopped (or 1 (10 oz) package frozen spinach, thawed and squeezed dry)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 2 green onions, sliced (optional)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the bacon until golden and crispy, about 8 minutes. Transfer to a paper towel-lined plate, let cool, and crumble (reserve some for topping).
  3. Pour off excess bacon grease, leaving about 1 tablespoon in the pan. Add chopped spinach and minced garlic. Sauté for 2-3 minutes until wilted (or 1 minute for thawed frozen spinach).
  4. In a medium mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth.
  5. Fold in mozzarella, Parmesan, salt, black pepper, and red pepper flakes. Mix until evenly combined.
  6. Add sautéed spinach and garlic, most of the crumbled bacon, and green onions to the bowl. Mix gently until incorporated. If too stiff, add a spoonful of sour cream.
  7. Spoon the mixture into a greased 8×8-inch baking dish. Smooth the top and sprinkle with reserved bacon and extra mozzarella.
  8. Bake for 20-25 minutes, until bubbly and lightly browned on top. Watch closely after 20 minutes.
  9. Let the dip cool for 5 minutes before serving. Serve warm with tortilla chips, baguette slices, or veggie sticks.

Notes

For best results, squeeze excess water from spinach to avoid a watery dip. Crisp bacon thoroughly for maximum crunch. Taste and adjust seasoning before baking. Let the dip rest for 5 minutes after baking for easier scooping. Can be made ahead and baked before serving. All ingredients are naturally gluten-free.
