A simple, quick, and comforting garlic butter brunch recipe perfect for Mother’s Day or any busy morning. Features fluffy scrambled eggs infused with garlic butter and served with toasted crusty bread.

Ingredients

Scale
  • 4 tablespoons unsalted butter
  • 3 cloves fresh garlic, finely minced
  • 6 large eggs, room temperature
  • 1/4 cup whole milk or half-and-half
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Crusty bread or English muffins, sliced for toasting
  • Optional: Grated Parmesan cheese for garnish

Instructions

  1. In a small saucepan over low heat, melt 4 tablespoons of unsalted butter. Add the minced garlic and cook gently for 2-3 minutes until fragrant and softened but not browned. Remove from heat and keep warm.
  2. Toast the slices of crusty bread or English muffins in a toaster or under the broiler until golden and crisp. Set aside.
  3. In a mixing bowl, crack 6 large eggs. Add 1/4 cup whole milk, a pinch of salt, and black pepper. Whisk vigorously until smooth and slightly frothy, about 30 seconds.
  4. Heat a non-stick skillet over medium-low heat. Pour in the egg mixture and let it sit without stirring for about 20 seconds until edges start to set.
  5. Gently stir the eggs with a spatula, pushing from edges toward the center. Continue stirring slowly for 3-4 minutes until soft curds form. Remove from heat while still slightly runny.
  6. Drizzle about half of the garlic butter over the scrambled eggs and gently fold it in to infuse flavor and texture.
  7. Spread the remaining garlic butter onto the toasted bread. Pile the scrambled eggs on top. Garnish with chopped fresh parsley and a sprinkle of Parmesan cheese if desired.
  8. Serve warm immediately.

Notes

Cook eggs on medium-low heat to keep them tender and creamy. Avoid burning garlic by melting butter over low heat. Use room temperature eggs for fluffier texture. Toast bread just before serving to maintain crispness. Garlic butter can be made ahead and gently warmed before use.
