These strawberry champagne jello shots combine the sweetness of fresh strawberries with the bubbly elegance of champagne for a quick, festive party treat that’s easy to make and sure to impress.

  • 750 ml bottle champagne or sparkling wine (dry or semi-dry)
  • 3 oz (85 g) strawberry-flavored gelatin mix
  • 1 cup fresh strawberries, sliced
  • 1/4 cup (50 g) granulated sugar
  • 1/2 cup (120 ml) cold water
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Pour 1/2 cup (120 ml) cold water into a mixing bowl. Sprinkle the 3 oz (85 g) strawberry gelatin powder evenly over the water’s surface. Let it sit for 5 minutes to bloom.
  2. In a small saucepan, combine 1/4 cup (50 g) sugar with 1/2 cup (120 ml) champagne. Warm gently over low heat, stirring until the sugar dissolves completely. Do not boil.
  3. Pour the warm champagne mixture into the bloomed gelatin. Whisk gently until the gelatin is fully dissolved and smooth.
  4. Stir in the remaining 1 cup (240 ml) champagne and 1 tablespoon lemon juice.
  5. Place 2-3 slices of fresh strawberries into each jello shot cup or silicone mold.
  6. Carefully fill each cup or mold with the gelatin and champagne mixture, leaving a little space at the top.
  7. Refrigerate for at least 4 hours or until fully set.
  8. Once set, gently loosen the edges with a small knife if needed, then pop the shots out or serve in the cups directly.

Notes

Bloom gelatin first to avoid lumps. Warm champagne gently with sugar to dissolve sugar without boiling to preserve bubbles. Pour mixture slowly into molds to avoid splashing. Chill for at least 4 hours for best texture. Avoid freezing as it alters texture. For vegan or gluten-free versions, substitute agar-agar for gelatin and sparkling cider for champagne.
