  • Pinch of salt and black pepper, to taste
  • 1 head Romaine lettuce (810 large leaves, washed and dried)
  • 1/2 cup shredded carrots
  • 1/4 cup diced celery
  • 1/4 cup crumbled blue cheese or feta (optional)
  • 2 tablespoons chopped fresh chives or green onions
  • Extra ranch or blue cheese dressing, for drizzling (optional)

Instructions

  1. Prep the Chicken: If not already done, cook and shred 2 cups of chicken breast. Poach, grill, bake, or use rotisserie chicken (remove skin and bones).
  2. Mix the Buffalo Chicken Filling: In a medium mixing bowl, combine shredded chicken, buffalo sauce, Greek yogurt, ranch, garlic powder, smoked paprika, salt, and pepper. Stir until evenly coated and creamy. Adjust yogurt or ranch to taste if too spicy or dry.
  3. Prep the Lettuce: Gently separate 8-10 large Romaine leaves. Rinse and pat dry thoroughly.
  4. Chop the Veggies: Slice carrots into thin matchsticks, dice celery, and chop chives or green onions.
  5. Assemble the Boats: Lay lettuce leaves on a platter. Spoon about 1/4 cup buffalo chicken mixture into each leaf. Top with carrots, celery, and blue cheese or feta if using.
  6. Garnish and Serve: Drizzle with extra ranch or blue cheese dressing and sprinkle with chives or green onions. Serve immediately for best crunch.

Notes

For milder flavor, use less buffalo sauce and more yogurt or ranch. Dry lettuce thoroughly to prevent sogginess. Prep the chicken filling ahead for better flavor. Store components separately for meal prep. Substitute chicken with turkey or jackfruit for dietary needs.
