These Healthy Air Fryer Zucchini Bites are a crispy, golden snack made with fresh zucchini, panko, and parmesan. They’re quick, easy, and perfect for parties, lunchboxes, or guilt-free snacking.

  • 2 medium zucchini, washed and ends trimmed (about 400g), cut into 1/2-inch rounds
  • 1/2 cup all-purpose flour (use almond flour for gluten-free)
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs (gluten-free if needed)
  • 1/3 cup grated parmesan cheese (or dairy-free alternative)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning (or dried basil/oregano)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick spray or oil mister (avocado oil recommended)
  • Optional for serving: Marinara sauce, fresh herbs (parsley or basil), lemon wedges

Instructions

  1. Wash and dry zucchini, trim ends, and slice into 1/2-inch rounds.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko, parmesan, garlic powder, Italian seasoning, salt, and pepper mixed together.
  3. Dip each zucchini round in flour (shake off excess), then egg (let excess drip), then panko mixture, pressing to coat all sides. Place coated rounds on a plate or baking sheet.
  4. Preheat air fryer to 400°F (200°C) for 2-3 minutes. Lightly spray basket with nonstick spray or oil.
  5. Arrange zucchini in a single layer in the basket (work in batches if needed). Lightly spray tops with oil.
  6. Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy. Check at 7 minutes if your air fryer runs hot. Add 2 more minutes if needed.
  7. Transfer to a plate and let cool 1-2 minutes. Sprinkle with fresh herbs and serve with marinara, lemon wedges, or your favorite dip.
  8. For oven method: Bake on a wire rack over a baking sheet at 425°F (220°C) for 18-20 minutes, flipping once.

Notes

For gluten-free, use almond flour and gluten-free panko. For vegan, use flax eggs and nutritional yeast or vegan cheese. Don’t overcrowd the air fryer basket for best crispiness. Let bites cool on a wire rack to avoid sogginess. Store leftovers in the fridge up to 3 days and reheat in the air fryer. You can freeze uncooked, breaded rounds and air fry from frozen.
