  • 1 cup pineapple chunks (fresh or frozen, about 165g)
  • 1 packed cup baby spinach leaves (about 30g)
  • 1 cup unsweetened coconut milk (240ml)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup (optional, 15ml)
  • 1/2 cup ice cubes (about 70g)
  • For the Whipped Coconut Topping:
  • 1 can full-fat coconut milk or coconut cream (400ml), chilled overnight
  • 1 tablespoon powdered sugar (8g) or honey
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional Garnishes:
  • Green sprinkles or matcha powder
  • Fresh mint leaves

Instructions

  1. Chill the can of full-fat coconut milk or coconut cream in the refrigerator overnight to separate and firm up the cream.
  2. Peel and chop the banana if needed. Measure out pineapple chunks, spinach, coconut milk, and ice cubes.
  3. Make the whipped coconut topping: Open the chilled coconut milk can and scoop out the solid cream into a mixing bowl (reserve the liquid for smoothies). Add powdered sugar, vanilla extract, and a pinch of salt. Whip with a hand mixer or whisk for 2-3 minutes until fluffy and holds peaks. If too thick, add a splash of coconut water. Refrigerate while making the smoothie.
  4. Add banana, pineapple chunks, spinach, coconut milk, vanilla extract, and ice cubes to a blender. Add honey or maple syrup if desired.
  5. Blend on high for 1-2 minutes until completely smooth and vibrant green. If too thick, add more coconut milk. If too thin, add more ice or frozen pineapple.
  6. Pour the smoothie into tall glasses, leaving room for the topping. Dollop or pipe the whipped coconut cream on top.
  7. Garnish with green sprinkles, matcha powder, or fresh mint leaves if desired. Serve immediately.

Notes

For best results, use frozen banana and pineapple for a thicker, creamier smoothie. Chill coconut cream overnight for a fluffy topping. Adjust sweetness to taste and blend longer for a super-smooth texture. The recipe is flexible—swap spinach for kale, use almond or oat milk, or add protein powder as desired.
