Fresh Grilled Watermelon with Balsamic Glaze

A quick and easy summer recipe featuring juicy watermelon wedges grilled to caramelized perfection and drizzled with tangy balsamic glaze. Perfect as a refreshing side dish or light dessert.

  • 4 cups (about 600g) fresh, ripe seedless watermelon, cut into 1-inch thick wedges or triangles
  • Balsamic glaze (store-bought or homemade balsamic reduction)
  • Extra virgin olive oil for brushing
  • Pinch of flaky sea salt or kosher salt
  • Freshly cracked black pepper (optional)
  • Fresh mint or basil leaves (optional)

Instructions

  1. Preheat the grill to medium-high heat (about 400°F or 200°C).
  2. Cut watermelon into 1-inch thick wedges or triangles and pat dry with paper towels to remove excess moisture.
  3. Lightly brush both sides of each watermelon slice with extra virgin olive oil.
  4. Place watermelon slices directly on the grill grates and cook for 2-3 minutes per side until grill marks appear and the watermelon starts to caramelize. Flip gently using tongs.
  5. Remove watermelon from the grill and sprinkle lightly with flaky sea salt and freshly cracked black pepper if using.
  6. Drizzle balsamic glaze generously over the grilled watermelon and scatter chopped fresh mint or basil leaves on top if desired.
  7. Serve immediately, best enjoyed warm or at room temperature.

Notes

Pat watermelon slices dry before grilling to ensure good caramelization and prevent sogginess. Use tongs to flip slices gently to avoid breaking. Drizzle balsamic glaze after grilling to prevent burning. Store leftovers in an airtight container in the refrigerator for up to 2 days and bring to room temperature before serving.
