Fresh Galentine’s Sparkling Pink Lemonade Punch

A festive, refreshing sparkling pink lemonade punch bursting with fresh lemon, raspberries, and a pop of fizz. Perfect for parties, brunches, or any celebration, this crowd-pleaser is easy to make, naturally gluten-free, and can be served with or without alcohol.

  • 1 cup freshly squeezed lemon juice (about 56 large lemons, strained)
  • 2/3 cup granulated sugar (or honey)
  • 3 cups cold water
  • 1 cup fresh raspberries (plus more for garnish; frozen okay)
  • 1/2 cup raspberry or cranberry juice (100% juice preferred)
  • 2 cups sparkling water or club soda
  • Optional: 1 bottle (750 ml) prosecco or sparkling rosé
  • 12 lemons, thinly sliced
  • 1/2 cup fresh strawberries, hulled and sliced
  • Fresh mint leaves
  • Ice cubes

Instructions

  1. Add 1 cup fresh raspberries to a blender and blend until smooth. For a seedless punch, strain the puree through a fine mesh strainer into a bowl.
  2. In a large pitcher or punch bowl, combine 1 cup lemon juice and 2/3 cup sugar. Stir until sugar dissolves (1-2 minutes). Add 3 cups cold water and mix well.
  3. Pour in the strained raspberry puree and 1/2 cup raspberry or cranberry juice. Stir gently until evenly pink.
  4. Right before serving, slowly add 2 cups sparkling water or club soda. If using prosecco or sparkling rosé, add the whole bottle now. Stir gently.
  5. Add ice cubes, lemon slices, strawberry slices, extra raspberries, and fresh mint leaves to garnish and chill.
  6. Ladle into glasses, ensuring each serving gets fruit and mint. Top with extra sparkling water if desired. Serve immediately.

Notes

Chill all ingredients before assembling for maximum fizz. Add sparkling water and ice just before serving to keep the punch bubbly and cold. Use frozen fruit as ice cubes to avoid watering down the punch. Adjust sweetness to taste, and feel free to swap in other berries or juices for color and flavor variations. For a kid-friendly version, skip the alcohol.
