A quick and easy 5-minute recipe combining crisp watermelon, salty feta, and fresh mint on skewers for a refreshing summer snack or appetizer.

Ingredients

  • Watermelon – firm, seedless, cut into 1-inch cubes
  • Feta Cheese – about 6 ounces, cut into 1-inch cubes
  • Fresh Mint Leaves – about 20 leaves, whole
  • Extra Virgin Olive Oil – 1 tablespoon (optional)
  • Freshly Ground Black Pepper – a pinch (optional)
  • Wooden or Bamboo Skewers – 6-inch length, soaked in water for 10 minutes

Instructions

  1. Cut the watermelon into 1-inch cubes, keeping pieces uniform.
  2. Slice the feta cheese into 1-inch cubes, handling gently to avoid breaking.
  3. Wash and pat dry the fresh mint leaves, selecting whole unblemished leaves.
  4. Optional: Lightly toss watermelon cubes with olive oil and black pepper in a bowl.
  5. Assemble skewers by threading watermelon cube, mint leaf, feta cube, another mint leaf, and finishing with watermelon. Use 3-4 pieces per skewer.
  6. Serve immediately or chill covered in the refrigerator for 15-30 minutes before serving.

Notes

Use firm, ripe watermelon for best texture. Keep feta chilled until assembly to maintain firmness. Add mint leaves just before serving to keep them fresh. Optional drizzle of balsamic glaze or honey adds a sweet-tart contrast. Store ingredients separately if making ahead to avoid sogginess.
