Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, sugar, and dried lavender.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces.
  4. In a separate bowl, whisk together the heavy cream, egg, and lavender honey until smooth.
  5. Pour the wet ingredients into the dry mixture and gently fold with a spatula until just combined. The dough will be sticky.
  6. Turn the dough onto a lightly floured surface and gently pat it into a 7-inch (18cm) circle about 1 inch (2.5cm) thick. Avoid kneading.
  7. Cut the circle into 8 equal wedges using a sharp knife or bench scraper. Transfer wedges to the prepared baking sheet, spacing about 2 inches apart.
  8. Brush the tops with a little heavy cream to encourage browning.
  9. Bake for 15-18 minutes until golden and a toothpick inserted comes out clean.
  10. Remove from oven and transfer scones to a cooling rack for 5-10 minutes.
  11. Serve warm with clotted cream and an optional drizzle of lavender honey.
