Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well with nonstick spray.
  2. In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate large bowl, whisk together egg, oil, buttermilk, vanilla extract, vinegar, and green food coloring.
  4. Add dry ingredients to wet ingredients and stir gently with a spatula until just combined. Do not overmix.
  5. Fill each muffin cup about 2/3 full with batter.
  6. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Tops should spring back when lightly pressed.
  7. Let cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
