Ingredients

Scale
  • 1 box (3 oz) red Jell-O (strawberry or cherry)
  • 1 box (3 oz) orange Jell-O
  • 1 box (3 oz) yellow Jell-O (lemon flavor)
  • 1 box (3 oz) green Jell-O (lime or melon)
  • 1 box (3 oz) blue Jell-O (berry blue)
  • 1 box (3 oz) purple Jell-O (grape)
  • Boiling water (as per package instructions, about 1 cup per box)
  • Cold water (as per package instructions, about 1 cup per box)
  • 1 cup heavy whipping cream (cold)
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • Optional: 4 oz cream cheese, softened
  • Store-bought whipped topping (optional, for speed)
  • Rainbow sprinkles (for garnish)
  • Fresh fruit pieces (optional, for garnish)

Instructions

  1. Prepare the first Jell-O layer: Empty the first Jell-O packet (e.g., red) into a mixing bowl. Add 1 cup boiling water and stir for 2 minutes until dissolved. Add 1 cup cold water and mix well. Pour about 1/4 cup into each cup/jar for the first layer. Chill in the refrigerator for 30-45 minutes, or until set but not rock-hard.
  2. Repeat for each color: Repeat the above steps for orange, yellow, green, blue, and purple Jell-O packets. Allow each layer to set fully before pouring the next. Each layer takes about 30-45 minutes to set.
  3. Make the whipped cream topping: Pour 1 cup cold heavy whipping cream into a chilled mixing bowl. Add 2 tablespoons powdered sugar and 1 teaspoon vanilla extract. Optional: Add 4 oz softened cream cheese. Using an electric mixer, whip on medium-high for 2-3 minutes or until soft peaks form.
  4. Layer and decorate: Once all Jell-O layers have set, use a piping bag or spoon to top each cup with a generous cloud of whipped cream. Optional: Sprinkle rainbow sprinkles or add fresh fruit for garnish. If making ahead, add whipped cream just before serving.
  5. Serve and enjoy: Refrigerate until ready to serve. Best enjoyed cold.

Notes

Be patient and let each Jell-O layer set fully before adding the next to avoid colors blending. Chill your mixing bowl and beaters for best whipped cream results. For dairy-free, use coconut whipped cream. For lower sugar, use sugar-free gelatin and sweetener. Add whipped cream just before serving for fluffiest texture. Jell-O layers can be made a day ahead.
