Instructions

  1. Measure out all ingredients and preheat your skillet or griddle to medium (about 350Β°F).
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a separate bowl, whisk together buttermilk, eggs, melted butter, and vanilla extract until smooth. Add a small squeeze of green gel food coloring and mix until the color is vibrant.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. The batter should be thick but pourable.
  5. Let the batter rest for 5 minutes to hydrate the flour and ensure fluffiness.
  6. Lightly grease your skillet with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet.
