  • 1 box chocolate cake mix (preferably Betty Crocker)
  • 3 large eggs, room temperature
  • 1 cup water (240 ml)
  • 1/3 cup vegetable oil (80 ml)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (120 g), sifted
  • 3 tablespoons freshly squeezed orange juice (from about 1 medium orange)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon orange zest (preferably organic)
  • 1/2 teaspoon vanilla extract
  • Optional toppings: whipped cream or frosting of choice (vanilla or cream cheese), additional orange zest or chocolate shavings for garnish

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Lightly grease a 9×13 inch (23×33 cm) baking pan with butter or non-stick spray. Line with parchment paper if desired.
  2. In a large bowl, combine chocolate cake mix, eggs, water, vegetable oil, and vanilla extract. Beat with an electric mixer on medium speed for about 2 minutes until smooth and well blended.
  3. Pour batter evenly into prepared pan and smooth the top with a spatula.
  4. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Avoid overbaking.
  5. Remove cake from oven and let cool for about 10 minutes. Using a toothpick or skewer, poke holes all over the cake about 1 inch (2.5 cm) apart.
  6. While cake cools, whisk together powdered sugar, orange juice, lemon juice, orange zest, and vanilla extract in a medium bowl. Adjust consistency by adding more juice or sugar as needed.
  7. Slowly drizzle glaze over the poked cake, making sure it fills the holes and covers the surface. Use a spatula to spread evenly if needed.
  8. Let cake cool completely in the pan, then refrigerate for at least 1 hour to allow glaze to set.
  9. Before serving, top with whipped cream or frosting if desired and garnish with extra orange zest or chocolate shavings.
