Ingredients

  • Whole-milk ricotta cheese (or part-skim)
  • Honey (mild, floral)
  • Fresh herbs (thyme, basil, parsley; rosemary optional)
  • Baguette or French bread, sliced thinly
  • Extra virgin olive oil
  • Lemon zest (optional)
  • Salt
  • Freshly ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into 1/4-inch thick rounds. Arrange on a baking sheet and lightly brush each slice with olive oil.
  2. Toast the bread in the oven for 8-10 minutes, flipping halfway, until golden and crisp. Watch closely to avoid burning.
  3. Place ricotta in a food processor and blend for 1-2 minutes until light, airy, and whipped. Add a teaspoon of milk or olive oil if too dense.
  4. Transfer whipped ricotta to a bowl. Add salt, freshly ground black pepper, lemon zest (if using), and finely chopped fresh herbs. Stir and adjust seasoning to taste.
  5. Spread a generous dollop of whipped ricotta on each toasted bread slice.
  6. Drizzle about half a teaspoon of honey over each crostini and garnish with small herb leaves or a sprinkle of herbs.
  7. Serve immediately for best texture and flavor.

Notes

If you don’t have a food processor, a hand mixer or sturdy whisk can be used but will take longer. Toast crostini ahead and store in an airtight container; whip and season ricotta just before serving. Use gluten-free crackers for a gluten-free option and plant-based ricotta or silken tofu for a vegan version. Add lemon zest or chili flakes for extra flavor.
