  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches (about 2 medium peaches), peeled and finely chopped
  • Optional: ½ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, allspice (if using), and salt.
  3. In another bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully combined and smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing gently just until combined. Avoid overmixing.
  6. Fold in the finely chopped peaches carefully to avoid releasing too much juice. If using nuts, fold them in now.
