  • 2 tablespoons honey (raw honey recommended)
  • 1 tablespoon soy sauce (Kikkoman recommended)
  • 1 tablespoon fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Optional garnish: fresh chopped parsley or sliced green onions

Instructions

  1. Pat the salmon fillets dry with paper towels, especially the skin side. Season both sides generously with salt and black pepper. Let rest at room temperature for about 10 minutes.
  2. In a small bowl, whisk together honey, soy sauce, lemon juice, and minced garlic. Set aside.
  3. Heat a non-stick or stainless steel skillet over medium-high heat and add olive oil. Heat until shimmering but not smoking, about 2 minutes.
  4. Place salmon fillets skin-side down in the hot pan. Press down gently with a spatula for about 10 seconds to prevent curling. Cook for 4-5 minutes without moving until skin is deep golden-brown and crispy.
  5. Flip the salmon carefully and cook for another 2-3 minutes until just cooked through and juicy inside (internal temperature about 125°F / 52°C for medium-rare).
  6. Pour the honey glaze over the salmon in the last minute of cooking. Tilt the pan and spoon the glaze repeatedly over the fillets to caramelize lightly without burning.
  7. Remove salmon from the pan and let rest for 2 minutes. Garnish with fresh parsley or green onions if desired and serve immediately.

Patting the salmon skin dry is crucial for crispiness. Avoid overcrowding the pan to prevent steaming. Add the honey glaze at the end to avoid burning the sugars. Use a thermometer to avoid overcooking; 125°F (52°C) is ideal for medium-rare salmon. Leftovers can be reheated gently in a skillet skin-side down to revive crispiness.
