Instructions

  1. Prep the vegetables: Boil baby potatoes in salted water for about 10 minutes until tender but firm. For green beans or asparagus, blanch in boiling water for 2-3 minutes, then drain and set aside.
  2. Make the garlic butter sauce: Melt 4 tablespoons unsalted butter in a large skillet over medium heat. Add minced garlic and sauté gently for 1-2 minutes until fragrant but not brown.
  3. Add seasonings: Stir in 1 teaspoon smoked paprika, freshly ground black pepper, and salt to taste. Add 1 tablespoon fresh lemon juice and chopped parsley. Stir well to combine.
  4. Toss the vegetables: Add the cooked potatoes, green beans, asparagus, or corn into the garlic butter sauce. Toss gently with tongs or a slotted spoon to coat evenly.
  5. Finish and serve: Cook everything together for an additional 2-3 minutes to meld flavors. Taste and adjust salt or lemon juice if needed. Optionally sprinkle extra fresh parsley on top before serving.
