A quick and easy no-bake dessert featuring creamy lemon-infused filling layered with fresh blueberries and graham crackers, perfect for a refreshing summer treat.

  • 8 ounces cream cheese, softened (full-fat recommended)
  • 1 cup heavy whipping cream, chilled
  • 3/4 cup powdered sugar
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries, washed and patted dry

Instructions

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
  2. Gradually add powdered sugar while mixing continuously to avoid lumps.
  3. Stir in vanilla extract, lemon zest, and lemon juice until evenly incorporated.
  4. In a separate chilled bowl, whip the heavy cream until stiff peaks form, about 5-7 minutes on medium-high speed.
  5. Gently fold the whipped cream into the cream cheese mixture until light and airy.
  6. Place a single layer of graham crackers in the bottom of an 8×8-inch baking dish.
  7. Spread one-third of the creamy filling evenly over the crackers.
  8. Sprinkle a generous handful of fresh blueberries over the filling.
  9. Repeat layering two more times, ending with cream and blueberries on top.
  10. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  11. Remove from fridge about 10 minutes before serving. Cut into squares with a sharp knife, wiping blade clean between cuts.
