  • 6 slices sandwich bread (white or whole wheat)
  • 6 tablespoons unsalted butter, softened
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Food coloring gels (red, blue, yellow, or green)
  • Optional: Pinch of garlic powder
  • Optional: Thinly sliced tomatoes or spinach
  • Optional: Sprinkle of kosher salt or cracked pepper

Instructions

  1. Divide each cheese into three separate bowls: one for mozzarella, one for cheddar, one for Monterey Jack.
  2. Add a few drops of food coloring gel to each bowl—red in one, blue in another, and yellow or green in the third. Toss gently until the cheese is evenly colored. If the cheese starts to clump, add a teaspoon of milk to loosen it.
  3. Spread 1 tablespoon of softened butter on one side of each bread slice. Lay the slices butter-side down on your cutting board.
  4. On three of your bread slices (non-buttered side up), layer a generous spoonful of each colored cheese, making stripes or blocks as you like. Press down lightly so the cheese layers stick but don’t spill over. Add optional veggies or meat if desired.
  5. Place the remaining bread slices on top, buttered side facing out. Gently press to seal.
  6. Heat a skillet or griddle over medium-low heat until hot but not smoking.
  7. Carefully transfer each sandwich to the skillet. Cook for 3-4 minutes on one side, pressing gently with your spatula. Flip and cook another 3-4 minutes. If the cheese isn’t fully melted, cover the pan with a lid for the last minute.
  8. Remove sandwiches from skillet and let them cool for a minute. Slice diagonally to reveal the color layers. Serve warm.

Notes

For best results, use gel food coloring for vivid hues and full-fat cheese for optimal melting. Medium-low heat prevents burning and ensures gooey cheese. Customize with gluten-free or dairy-free ingredients as needed. Serve immediately for the brightest colors and crispiest bread.
