A magical, colorful layered smoothie breakfast inspired by Dr. Seuss, featuring vibrant fruit layers stacked in a tall glass. This kid-approved, wholesome recipe is perfect for birthdays, special mornings, or whenever you need a cheerful start to the day.

  • Red Layer:
  • 1/2 cup strawberries, hulled and sliced (fresh or frozen)
  • 1/4 cup apple juice (or water)
  • Orange Layer:
  • 1/2 cup mango chunks (fresh or frozen)
  • 1/4 cup orange juice (or coconut water)
  • Yellow Layer:
  • 1/2 cup pineapple chunks (fresh or canned in juice)
  • 1 small banana, sliced
  • 1/4 cup almond milk (or any milk alternative)
  • Green Layer:
  • 1/2 cup baby spinach leaves (washed and packed)
  • 1/2 kiwi, peeled and sliced
  • 1/4 cup coconut milk (or water)
  • Blue/Purple Layer:
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup grape juice (or water)
  • Optional: 2–3 blackberries for deeper color
  • Thickener & Creaminess:
  • 1/2 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • Optional: 1 tablespoon chia seeds
  • Sweetener:
  • 12 tablespoons honey or maple syrup (to taste; leave out for younger babies)

Instructions

  1. Wash all fruit and greens thoroughly. Slice bananas, hull strawberries, peel kiwi. If using frozen fruit, let it sit out for 5–10 minutes for easier blending.
  2. Blend each layer separately:
  3. Red Layer: Add strawberries and apple juice to blender. Blend until smooth (about 30 seconds). Add 1 tablespoon yogurt for extra creaminess, if desired. Spoon the mixture into the bottom of your glass. Place glass in freezer for 2–3 minutes to firm up the layer.
  4. Orange Layer: Rinse blender. Add mango and orange juice, plus 1 teaspoon chia seeds if using. Blend smooth (about 30 seconds). Spoon gently over red layer, smoothing with the back of a spoon. Freeze glass again for 2 minutes if you want sharp layers.
  5. Yellow Layer: Blend pineapple, banana, and almond milk. Add a touch of yogurt for thickness. Pour carefully above orange layer. Use a spoon to level it off.
  6. Green Layer: Blend spinach, kiwi, and coconut milk until very smooth (blend 45 seconds). Spoon over yellow layer. If the green looks dull, add a few extra spinach leaves for brightness.
  7. Blue/Purple Layer: Rinse blender. Add blueberries, grape juice, and blackberries if desired. Blend until rich and vibrant. Spoon over green layer to top off your rainbow tower.
  8. If any layer tastes too tart, stir in a little honey or maple syrup. Adjust sweetness to taste.
  9. Use a spoon to gently add each layer, pouring slowly to avoid mixing colors. Freeze glass for a few minutes between layers for crisp lines.
  10. Garnish with fresh berries, coconut flakes, or a whimsical paper straw. Optionally, drizzle honey on top.
  11. If a layer is too thin, blend in more yogurt or frozen fruit. If too thick, add a splash of liquid and re-blend.
  12. Serve immediately for best color and texture.
  13. Prep fruit the night before and store each layer’s ingredients in the fridge for a quick morning assembly.

Notes

For best results, use ripe, vibrant fruit and freeze the glass between layers to keep colors crisp. Adjust sweetness to taste and use yogurt or chia seeds for thicker layers. Recipe is flexible—swap fruits as needed and use plant-based yogurt/milk for vegan or dairy-free. Serve immediately for best texture and color.
