  • 10 oz (about 6 cups) mini marshmallows
  • 6 tablespoons unsalted butter
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt
  • Food coloring gels (red, orange, yellow, green, blue, purple)
  • Non-stick spray or extra butter (for greasing pan and hands)
  • Optional: rainbow sprinkles
  • Optional: white chocolate for drizzling

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or grease with nonstick spray, leaving an overhang for easy lifting. Set aside.
  2. Set out six mixing bowls and add a small amount of food coloring gel to each (one for each color of the rainbow). Measure out the rice cereal and have it ready.
  3. In a large saucepan over medium-low heat, melt the butter. Add mini marshmallows and stir constantly until melted and smooth (about 3-4 minutes). Remove from heat and stir in vanilla extract and a pinch of salt.
  4. Quickly divide the melted marshmallow mixture evenly among the six bowls.
  5. In each bowl, add 1 cup rice cereal and stir until evenly colored and combined. If the mixture stiffens, microwave for 10 seconds to loosen.
  6. Starting with purple (or your chosen bottom color), scoop the mixture into the prepared pan. Gently press and smooth the layer with a buttered spatula or greased hands. Repeat with blue, green, yellow, orange, and red, pressing each layer flat but not too hard.
  7. Let the treats cool at room temperature for at least 30 minutes, or refrigerate for 15 minutes until firm.
  8. Lift the slab out using the parchment overhang. Cut into 24 squares with a greased sharp or plastic knife, wiping between cuts for clean edges.

Notes

For best results, use gel food coloring for vibrant stripes and work quickly as the marshmallow mixture sets fast. Gently press each layer to avoid blending colors. Let each layer set for 1-2 minutes before adding the next for neat stripes. These treats can be made gluten-free with certified gluten-free rice cereal and dairy-free with vegan butter and marshmallows.
