Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your mini muffin pan or line with silicone molds to prevent sticking.
  2. In a large bowl, whisk together the melted butter and sugar until combined and shiny. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla and peppermint extracts.
  3. In a separate bowl, sift the flour, cocoa powder, and salt to prevent lumps and ensure even mixing.
  4. Gently fold the dry ingredients into the wet mixture using a spatula, just until no streaks remain. Avoid overmixing to keep the brownies tender.
  5. Fold in half of the mint chocolate chips to distribute flavor evenly. Reserve the rest for sprinkling on top before baking.
  6. Spoon batter into prepared mini muffin cups, filling about 3/4 full. Sprinkle remaining mint chips on top for a pretty finish.
  7. Bake for 12–15 minutes. Check at 12 minutes by inserting a toothpick; it should come out with a few moist crumbs but no wet batter.
  8. Let brownie bites cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
