Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, salt, chili powder, and cinnamon.
  3. Using an electric mixer, beat softened butter with granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Add dry ingredients in three parts, alternating with milk, starting and ending with dry ingredients. Mix gently until combined.
  6. Drop rounded spoonfuls (about 2 tbsp or 30 ml each) onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 12-14 minutes until pies spring back lightly when pressed and a toothpick comes out clean with a few moist crumbs.
  8. Transfer pies to a cooling rack and cool completely.
  9. For the filling, beat softened butter with powdered sugar until fluffy, about 3 minutes.
  10. Add vanilla extract, cinnamon, cayenne pepper (if using), and milk to reach spreadable consistency.
  11. Spread or pipe about 2 tbsp (30 ml) of filling on the flat side of one cake, then top with another to form a sandwich.
  12. Press gently to spread filling evenly without squishing out.

Do not overmix the batter to keep pies tender. Use room temperature ingredients for better texture. Use quality Dutch-processed cocoa powder for authentic flavor. Pipe filling for neat assembly.
