  • 1 cup (40g) mini pretzels
  • 1/2 cup (70g) dry roasted peanuts
  • 1/4 cup (35g) sunflower seeds
  • 1/2 cup (60g) dried cranberries
  • 1/4 cup shredded unsweetened coconut
  • 1 teaspoon ground cinnamon
  • 2 tablespoons maple sugar or coconut sugar
  • 1/2 teaspoon sea salt
  • 2 teaspoons light olive oil or lightly toasted coconut oil

Instructions

  1. Measure 3 cups (90g) Rice Chex cereal, 1 cup (40g) mini pretzels, 1/2 cup (70g) dry roasted peanuts, 1/4 cup (35g) sunflower seeds, and 1/2 cup (60g) dried cranberries. Set aside.
  2. In a large mixing bowl, gently combine all the dry ingredients to distribute them evenly without crushing the cereal or pretzels.
  3. In a small bowl, stir together 1 teaspoon ground cinnamon, 2 tablespoons maple sugar, and 1/2 teaspoon sea salt.
  4. Drizzle 2 teaspoons of light olive oil or lightly toasted coconut oil over the dry mix. Toss gently to coat.
  5. Sprinkle the spice mix evenly over everything and toss again until the coating is uniform but not soggy.
  6. Optional: Spread the mix evenly on a parchment-lined baking sheet and toast in a preheated oven at 300°F (150°C) for about 10 minutes, stirring halfway through. Watch closely to avoid burning.
  7. Let the mix cool completely on the baking sheet or in the bowl if skipping toasting to prevent moisture buildup.
  8. Transfer to an airtight container or large zip-top bag. Store at room temperature for up to two weeks.

Notes

Use dry roasted nuts and seeds for better flavor and less oiliness. Toasting is optional but enhances crunch and flavor. Be gentle when mixing to avoid crushing cereal and pretzels. Cool completely before storing to prevent sogginess. For nut-free version, replace peanuts with extra seeds or roasted chickpeas. For gluten-free, use certified gluten-free pretzels or cereal flakes.
