Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings dry with paper towels and separate drumettes and flats if needed.
  3. In a large mixing bowl, combine flour (or cornstarch), garlic powder, onion powder, paprika, salt, and black pepper. Toss wings in the mixture until evenly coated.
  4. Arrange coated wings on the wire rack in a single layer, ensuring they do not touch.
  5. Bake wings for 30 minutes, flipping halfway through at 15 minutes, until golden and firm to the touch.
  6. While wings bake, melt butter over low heat in a small saucepan. Remove from heat and stir in lemon juice, lemon zest, and optional honey or maple syrup. Adjust salt and pepper to taste.
  7. Transfer cooked wings to a large bowl, pour lemon butter sauce over them, and toss gently to coat.
  8. Garnish with chopped fresh parsley if desired and serve immediately.

Notes

For extra crispiness, broil wings for the last 2-3 minutes watching carefully to avoid burning. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C). Dry wings thoroughly before seasoning. Toss wings in sauce just before serving to keep skin crispy. For gluten-free, substitute flour with cornstarch or rice flour.
