  • 2 large boneless, skinless chicken breasts (about 1 lb), cut into strips
  • 8 slices thin-cut bacon
  • 4 oz mozzarella cheese, cut into sticks (or use string cheese sticks, halved)
  • 4 oz sharp cheddar cheese, cut into sticks
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs (swap with gluten-free if needed)
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning (optional)
  • 2 large eggs, beaten
  • Favorite dipping sauces: Ranch, honey mustard, spicy sriracha mayo, or BBQ sauce
  • Fresh parsley or chives, chopped (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper. If you have a wire rack, set it on top of the baking sheet.
  2. Cut the chicken breasts into 8 even strips (about 1-inch wide). Season all over with garlic powder, smoked paprika, salt, and pepper. Pat the chicken dry with paper towels for better browning.
  3. Slice mozzarella and cheddar into sticks about 2 inches long and 1/2 inch thick.
  4. In one bowl, whisk the eggs. In another, mix panko, Parmesan, and Italian seasoning.
  5. Lay a strip of chicken flat. Place a stick of mozzarella and cheddar in the center. Roll up tightly around the cheese. Wrap one slice of bacon around the chicken roll, spiraling so the ends overlap. Secure with a toothpick.
  6. Dip each bacon-wrapped chicken bomb into the egg, then roll in the breadcrumb mixture, pressing to help the coating stick. Place on the prepared pan or rack.
  7. Bake for 20-25 minutes, flipping once halfway, until bacon is crispy, chicken is cooked through (165°F), and cheese is bubbling at the edges.
  8. Let the bombs cool for 2-3 minutes so the cheese sets a bit. Sprinkle with fresh herbs if desired.
  9. Remove toothpicks, pile onto a platter, and serve with your favorite dipping sauces while hot.

Notes

For extra crunch, double-dip in egg and breadcrumbs. Chill assembled bombs for 10-15 minutes before baking to help cheese stay inside. Broil for 1-2 minutes at the end if bacon isn’t crisp enough. For gluten-free, use gluten-free breadcrumbs or crushed pork rinds. Air fryer method: 375°F for 12-15 minutes, flipping halfway.
