Crispy Blackstone Smash Burgers with Secret Sauce

A quick and easy recipe for perfectly crispy and juicy smash burgers cooked on a Blackstone griddle, topped with a tangy, creamy secret sauce.

  • 1 lb ground beef, 80/20 fat ratio
  • Salt and freshly ground black pepper, to taste
  • 4 slices American or cheddar cheese
  • Soft burger buns, lightly toasted (Brioche or potato buns recommended)
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp pickle juice (from dill pickles)
  • Salt and pepper, to taste
  • Optional toppings: sliced pickles, shredded lettuce, thinly sliced red onion, tomato slices

Instructions

  1. Preheat the Blackstone griddle to medium-high heat, about 400°F (204°C), and let it heat for about 5 minutes until hot.
  2. While the griddle heats, whisk together mayonnaise, ketchup, mustard, smoked paprika, garlic powder, onion powder, pickle juice, salt, and pepper in a bowl to make the secret sauce. Set aside.
  3. Divide the ground beef into 4 equal portions (about 4 oz each) and loosely roll into balls without overworking the meat.
  4. Place one beef ball on the griddle and immediately press down firmly with a metal spatula to about ¼ inch thickness. Hold for 15-20 seconds to create a crispy crust.
  5. Season the patties with salt and pepper right after smashing. Cook without moving for 2-3 minutes to form a golden crust.
  6. Flip the patties carefully, add a slice of cheese on each, and cook for another 1-2 minutes until cheese melts and patties reach medium rare to medium doneness.
  7. Toast the buns cut-side down on the griddle for about 30 seconds until golden and slightly crispy.
  8. Assemble the burgers by spreading secret sauce on the bottom buns, adding the patties, then optional toppings like pickles, onions, lettuce, and tomatoes. Cap with the top buns.
  9. Serve immediately while hot to enjoy the crispy crust and melty cheese.

Notes

Do not press the patties after flipping to retain juices. Let the crust develop fully before flipping. If patties stick, wait a bit longer before flipping. The secret sauce tastes better after resting in the fridge for a day. For gluten-free, use almond flour buns or lettuce wraps. For plant-based, use vegan mayo and plant-based ground beef alternatives.
