  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Pinch of salt and pepper, to taste
  • 1 cup shredded sharp cheddar cheese (or Monterey Jack)

  • 1/4 cup crispy fried onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with nonstick spray or butter.
  2. Open biscuit can and separate biscuits. Flatten each into a 4-inch round with hands or rolling pin. Press each round into the bottom and up the sides of muffin cups, creating a well.
  3. In a medium bowl, mix shredded chicken, barbecue sauce, smoked paprika, garlic powder, salt, and pepper until chicken is evenly coated.
  4. Spoon about 2 tablespoons of BBQ chicken mixture into each biscuit cup, pressing gently.
  5. Sprinkle 1 tablespoon shredded cheddar cheese over each cup. Top with green onions and crispy fried onions if using.
  6. Bake on center rack for 18–22 minutes, until biscuit edges are golden brown and cheese is bubbling. Check at 18 minutes.
  7. Let cups cool in tin for 5 minutes. Run a butter knife around edges to release, then transfer to a wire rack.
  8. Garnish with extra green onions or a drizzle of barbecue sauce before serving, if desired.
