  • 8 oz (225 g) corned beef, thinly sliced or chopped
  • 1 cup (150 g) sauerkraut, well-drained
  • 1 cup (100 g) Swiss cheese, shredded or sliced thin
  • 12 egg roll wrappers
  • 2 tbsp (30 ml) butter, melted
  • For the Thousand Island Dip:
  • ½ cup (120 ml) mayonnaise
  • 2 tbsp (30 ml) ketchup
  • 1 tbsp (15 ml) dill pickle relish
  • 1 tsp (5 ml) Worcestershire sauce
  • ½ tsp (2.5 ml) garlic powder
  • ½ tsp (2.5 ml) onion powder
  • Salt and pepper, to taste

Instructions

  1. In a medium bowl, combine chopped corned beef, well-drained sauerkraut, and shredded Swiss cheese. Mix gently to distribute evenly.
  2. Lay one egg roll wrapper flat on a clean surface in a diamond shape. Brush edges lightly with melted butter.
  3. Place about 2 tablespoons of filling near the corner closest to you. Fold the corner over the filling, fold in both side corners snugly, and roll tightly toward the far corner. Seal with a dab of butter. Repeat with remaining wrappers and filling.
  4. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  5. Arrange egg rolls in a single layer in the air fryer basket, ensuring they do not touch. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. While egg rolls cook, whisk together mayonnaise, ketchup, dill pickle relish, Worcestershire sauce, garlic powder, onion powder, salt, and pepper to make the Thousand Island dip. Chill until serving.
  7. Serve the hot, crispy egg rolls with the Thousand Island dip on the side.

Notes

Drain sauerkraut well to avoid soggy wrappers. Brush wrappers with melted butter for a golden crisp finish. Do not overfill egg rolls to prevent bursting. Flip egg rolls halfway through cooking for even crispiness. Let cooked egg rolls rest on a cooling rack for a couple of minutes to keep the bottom crisp. For gluten-free, use gluten-free or rice paper wrappers and adjust cooking time accordingly. Egg rolls can be assembled ahead and refrigerated up to 24 hours before cooking. Leftovers store in the fridge for up to 3 days and reheat in the air fryer at 350°F for 3-5 minutes.
