  • 2 large boneless, skinless chicken breasts (about 1 lb)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (preferably oil-packed)
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 2 cups fresh spinach, roughly chopped (optional)
  • Salt and pepper, to taste (start with 1/2 teaspoon each)
  • 2 tablespoons fresh basil, chopped (for garnish)

Instructions

  1. Pat chicken breasts dry with paper towels. Slice each breast in half lengthwise or pound to an even thickness (about 1/2 inch). Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 4-5 minutes per side until golden brown and just cooked through (internal temp: 165°F). Remove chicken to a plate and tent loosely with foil.
  3. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the same pan; sauté 1-2 minutes until fragrant. Stir in Italian seasoning.
  4. Pour in chicken broth, scraping up any brown bits from the pan.
  5. Stir in heavy cream and bring to a gentle simmer. Add parmesan cheese, stirring until melted and smooth. If sauce is too thick, add more broth 1 tablespoon at a time.
  6. Toss in spinach and stir until wilted and vibrant green.
  7. Return chicken to the pan, nestling into the sauce. Simmer 2 minutes to heat through.
  8. Sprinkle with fresh basil and extra parmesan. Serve hot, spooning extra sauce over each piece.

Notes

For best results, use air-chilled chicken breasts and oil-packed sun-dried tomatoes. If using dry sun-dried tomatoes, rehydrate in warm water for 10 minutes. For a lighter sauce, substitute half-and-half for heavy cream. To make it dairy-free, use coconut cream and vegan parmesan. Let the chicken rest in the sauce for a couple of minutes before serving for maximum juiciness. Leftovers keep well in the fridge for up to 3 days.
