  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 3/4 cup (180 ml) low sodium chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 1/3 cup grated Parmesan cheese
  • A handful of fresh basil, chopped
  • 1 tablespoon butter (optional)

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and pepper. Let rest for about 5 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering, about 2 minutes.
  3. Add chicken breasts and cook undisturbed for 5-6 minutes until golden brown on the underside. Flip and cook another 5 minutes or until internal temperature reaches 165°F (74°C). Remove chicken and set aside tented with foil.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the pan. Sauté for 1-2 minutes until fragrant, stirring constantly.
  5. Stir in dried Italian herbs. Pour in chicken broth, scraping browned bits from the pan bottom.
  6. Simmer broth for 3-4 minutes to reduce slightly. Stir in heavy cream and butter (if using). Bring to a gentle simmer.
  7. Add grated Parmesan cheese and stir until melted and smooth. Adjust salt and pepper to taste.
  8. Return chicken breasts to the pan, nestle into the sauce, and cook together for 2 minutes to meld flavors.
  9. Sprinkle chopped fresh basil on top before serving.

Notes

If sauce is too thick, add a splash of chicken broth to loosen. If too thin, simmer a bit longer to reduce. Avoid boiling cream to prevent curdling. Pat chicken dry before searing for best browning. Use medium-high heat for searing and do not overcook chicken to keep it tender.
