  • 1 cup frozen strawberries, thawed and roughly pureed

  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until crumbs are evenly coated and resemble wet sand.
  2. Press the crust mixture firmly and evenly into the bottom and up the sides of a 9-inch pie pan. Chill in the refrigerator for at least 15 minutes.
  3. Puree thawed frozen strawberries in a blender or food processor until smooth but still slightly textured.
  4. In a large bowl, beat softened cream cheese with powdered sugar until smooth and creamy, about 2-3 minutes.
  5. Stir in strawberry puree, fresh lemon juice, lemon zest, and vanilla extract until fully combined.
  6. In a chilled bowl, whip cold heavy cream until stiff peaks form, about 3-4 minutes.
  7. Gently fold whipped cream into the cream cheese mixture until no streaks remain.
  8. Pour the filling over the chilled crust and smooth the top with a spatula.
  9. Cover the pie with plastic wrap and freeze for at least 4 hours or overnight until firm.
  10. Remove from freezer 10-15 minutes before slicing to soften slightly. Garnish with fresh strawberries, lemon slices, or mint if desired.

Notes

Make sure cream cheese is fully softened to avoid lumps. Whip cream to stiff peaks for best texture. Fold whipped cream gently to keep filling light and airy. Use fresh lemon juice for best flavor. Freeze at least 4 hours for firm slices. Let pie thaw 10-15 minutes before serving for easier slicing. For vegan or gluten-free versions, substitute ingredients as suggested.
