A creamy, spicy buffalo chicken dip made effortlessly in a slow cooker, perfect for parties and casual gatherings. This dip combines shredded chicken, cream cheese, buffalo sauce, and cheddar for a crowd-pleasing appetizer.

  • 3 cups shredded cooked chicken (about 400g, rotisserie chicken recommended)
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) buffalo wing sauce (Frank’s RedHot recommended)
  • 1/2 cup (120ml) ranch dressing
  • 1 cup (about 100g) shredded cheddar cheese
  • 1/4 cup blue cheese crumbles (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Freshly ground black pepper to taste
  • Chopped green onions or chives for garnish

Instructions

  1. Prepare the chicken by shredding it finely using two forks or your hands to get about 3 cups (400g) of bite-sized pieces.
  2. Soften the cream cheese by leaving it out for 30 minutes or microwaving for 20 seconds in a microwave-safe bowl.
  3. Add shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, shredded cheddar cheese, garlic powder, onion powder, and black pepper to the slow cooker.
  4. Mix everything thoroughly with a spoon or spatula until the cream cheese is fully incorporated and the mixture is evenly coated.
  5. Cover and cook on low for 2 to 3 hours, stirring once or twice during cooking to prevent sticking and check texture.
  6. If using, stir in blue cheese crumbles about 10 minutes before serving to warm through without melting completely.
  7. Just before serving, stir the dip well, taste and adjust seasoning if needed, then garnish with chopped green onions or chives.

Notes

Soften cream cheese before mixing to avoid lumps. Stir dip once or twice during cooking to prevent sticking. Adjust heat by varying buffalo sauce amount. Keep dip warm on slow cooker ‘warm’ setting for best serving temperature. If dip is too thick after cooking, add milk or ranch dressing; if too thin, cook uncovered for 15 minutes to thicken.
