  • ⅓ cup (65g) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • Optional: powdered sugar for dusting
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or nonstick spray and set aside.
  2. In a medium bowl, combine diced peaches, brown sugar, cinnamon, cornstarch, and lemon juice. Toss to coat evenly and set aside.
  3. In a large mixing bowl, whisk together melted butter and granulated sugar until smooth and glossy, about 2 minutes.
  4. Add eggs one at a time, whisking well after each addition to create a silky texture.
  5. Stir in vanilla extract. Sift in flour, cocoa powder, salt, and baking powder. Fold gently with a rubber spatula until just combined.
  6. Pour half of the brownie batter into the prepared pan, spreading evenly.
  7. Drop spoonfuls of the peach mixture over the batter, then dollop the remaining brownie batter on top in chunks.
  8. Use a butter knife or skewer to gently swirl the peach filling into the brownie batter, creating a marbled effect without over-swelling.
  9. Bake for 35-40 minutes, checking around 33 minutes. The edges should look set and a toothpick inserted should come out with a few moist crumbs.
