  • 1.5 pounds (700 g) baby potatoes, halved (Yukon gold or red potatoes recommended)
  • 1 large head broccoli, cut into bite-sized florets
  • 3 tablespoons honey (preferably raw or organic)
  • 4 cloves garlic, minced fresh
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon dried thyme
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss halved baby potatoes with 2 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon pepper, and half the dried thyme. Spread potatoes evenly on one side of your oven-safe skillet or roasting pan. Roast for 15 minutes.
  3. While potatoes roast, pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and the remaining thyme.
  4. In a small bowl, whisk together honey, minced garlic, soy sauce, lemon juice, and 1 tablespoon olive oil to make the honey garlic sauce.
  5. Heat a tablespoon of olive oil in a skillet over medium-high heat. Add chicken breasts and sear for 3 minutes on each side until golden brown (not fully cooked through).
  6. After the initial potato roast, remove the pan and scatter broccoli florets alongside the potatoes. Nestle the seared chicken breasts on top of the veggies.
  7. Pour the honey garlic sauce evenly over the chicken and vegetables. Swirl gently to coat everything.
  8. Return the skillet to the oven and roast for 15-18 minutes until chicken reaches an internal temperature of 165°F (74°C), potatoes are tender and crispy, and broccoli is bright green and slightly crisp-tender.
  9. Remove from oven and let the chicken rest for 5 minutes before serving.

Notes

For extra crispy potatoes, toss them halfway through roasting. Pat chicken dry for better searing and caramelization. Use fresh minced garlic for best flavor. Watch the honey garlic sauce during roasting to prevent burning; tent with foil if needed. Let chicken rest 5 minutes before serving to keep it juicy. For soy-free version, substitute soy sauce with coconut aminos. You can swap potatoes for cauliflower or turnips for a low-carb variation.
