  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for filling)
  • 23 tablespoons heavy cream or milk
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking powder, salt, and ground cinnamon. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the egg and vanilla extract until fully combined and smooth.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until combined. Avoid overmixing.
  6. Shape the dough into a disk, wrap in plastic, and chill in the fridge for at least 30 minutes.
  7. Mix granulated sugar and cinnamon in a small bowl for coating.
  8. Lightly flour your work surface and rolling pin. Roll dough out to about ¼ inch (6mm) thickness. Use a round cookie cutter (about 2.5 inches/6 cm) to cut out cookies. Re-roll scraps as needed.
  9. Press each cookie into the cinnamon sugar mixture until fully coated on both sides.
  10. Place cookies 1 inch apart on prepared baking sheets. Bake for 10-12 minutes, or until edges are just turning golden.
  11. Transfer cookies to a wire rack and let cool completely before filling.

  13. Add vanilla extract, pinch of salt, and 2-3 tablespoons heavy cream or milk. Beat until light and fluffy, about 3-4 minutes. Adjust cream to reach desired spreadable consistency.
  14. Spread about 1 tablespoon of filling on the flat side of one cookie, then sandwich with another cookie. Press gently to spread filling evenly.
  15. Place assembled cookies in the fridge for 15-20 minutes to let the filling set.
