  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 1 3/4 cups milk (dairy or plant-based)
  • 1/3 cup unsalted butter, melted (or coconut oil for dairy-free)
  • 2 tsp pure vanilla extract
  • 1 lb fresh strawberries, hulled
  • 6 oz semi-sweet chocolate chips or chopped chocolate (dark or milk works too)
  • 1 tbsp coconut oil or butter
  • Powdered sugar, for dusting
  • Extra chocolate, melted, for drizzling (optional)
  • Whipped cream or Greek yogurt (for serving)

Instructions

  1. Wash and hull the strawberries. Pat dry thoroughly.
  2. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second bursts, stirring between each, until smooth (1–2 minutes). Alternatively, melt gently over simmering water in a double boiler.
  3. Hold each strawberry by the stem and dip into the melted chocolate, letting excess drip off. Place on a parchment-lined baking sheet. Chill in the fridge for 15–20 minutes until set.
  4. In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk eggs, milk, melted butter, and vanilla.
  5. Pour wet ingredients into dry, whisking gently until just combined. Batter will be slightly lumpy—do not overmix.
  6. Preheat waffle iron and lightly grease with oil or nonstick spray.
  7. Ladle about 1/2 cup batter into the waffle maker. Cook for 3–5 minutes, until golden and crisp. Remove and keep warm. Repeat with remaining batter.
  8. To assemble, place one waffle on a plate. Top with chocolate-dipped strawberries, add another waffle, and repeat layers as desired (usually 2–3 waffles per stack).
  9. Dust with powdered sugar, drizzle with extra melted chocolate, and add a dollop of whipped cream or Greek yogurt. Serve immediately while warm.

Notes

Let the batter rest for 5 minutes before cooking for fluffier waffles. Dry strawberries thoroughly before dipping to help chocolate adhere. Keep cooked waffles warm in a low oven on a wire rack.
