  • 2 cups vanilla Greek yogurt (or plain, sweetened to taste)
  • 23 tablespoons honey or maple syrup (optional, to taste)
  • 1 cup shortbread cookies, graham crackers, or digestive biscuits, crushed (gluten-free works too)
  • Mini chocolate chips or chocolate shavings (optional, for garnish)
  • Extra cookie crumbs (optional, for garnish)
  • Whipped cream or coconut whip (optional, for garnish)
  • Mint leaves (optional, for garnish)

Instructions

  1. Wash and thoroughly dry about 1 pound of fresh strawberries. Remove stems and hull if desired.
  2. In a microwave-safe bowl, combine 6 oz chocolate chips and 1 teaspoon coconut oil. Microwave in 20-second bursts, stirring after each, until melted and glossy (about 1-1.5 minutes). Alternatively, melt in a double boiler.
  3. Hold each strawberry by the stem and dip halfway into the melted chocolate. Let excess drip off, then place on a parchment-lined plate. Repeat with 8-10 strawberries. Chill in the fridge for at least 15 minutes until chocolate is firm.
  4. Crush 1 cup cookies or biscuits in a zip-top bag with a rolling pin or pulse in a food processor to small chunks.
  5. In a bowl, stir together 2 cups Greek yogurt and 2-3 tablespoons honey or maple syrup, if desired. Adjust sweetness to taste.
  6. Thinly slice the remaining strawberries for layering.
  7. To assemble: Spoon about 2 tablespoons cookie crumbs into the bottom of each jar. Add a layer of yogurt (about 1/4 cup), then a few strawberry slices. Repeat layers of cookie crumbs, yogurt, and strawberries until jars are nearly full.
  8. Top each jar with a chilled, chocolate-dipped strawberry and a sprinkle of cookie crumbs or chocolate shavings.
  9. Chill jars for at least 30 minutes before serving. Serve straight from the fridge.

Notes

For best results, use firm, ripe strawberries and thick Greek yogurt. Make ahead up to a day in advance, but add the chocolate-dipped strawberry just before serving for maximum crunch. For gluten-free or dairy-free versions, use appropriate cookies and yogurt. Customize with your favorite berries, cookies, or chocolate type. If yogurt is runny, strain before using for thicker layers.
