Buffalo Chicken Pizza Rolls are a spicy, cheesy, and crowd-pleasing snack perfect for game day or parties. They feature shredded chicken, buffalo sauce, and gooey cheese rolled in pizza dough and baked until golden brown.

  • 2 cups cooked chicken breast, shredded (rotisserie chicken recommended)
  • 1/3 cup cream cheese, softened
  • 1/2 cup buffalo wing sauce (such as Frank’s RedHot)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons unsalted butter, melted (plus 1 tablespoon for brushing tops)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 pound pizza dough, homemade or store-bought (room temperature)
  • OR 2 tubes refrigerated crescent roll dough
  • Ranch or blue cheese dressing, for dipping
  • Chopped green onions or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease.
  2. In a medium mixing bowl, combine shredded chicken, cream cheese, buffalo sauce, mozzarella, blue cheese (if using), 2 tablespoons melted butter, garlic powder, salt, and black pepper. Mix until creamy and evenly coated.
  3. Lightly flour your work surface and roll pizza dough into a 12×15-inch rectangle. If using crescent rolls, press seams together to form a solid sheet.
  4. Spread buffalo chicken mixture evenly over the dough, leaving a 1/2-inch border along one long edge.
  5. Starting from the long side, roll up the dough tightly (like a jelly roll). Place seam-side down. Slice into 12 even pieces (about 1.25-inch each) using a sharp knife or pizza cutter.
  6. Arrange rolls cut-side up on the baking sheet, spacing about 2 inches apart. Brush tops lightly with melted butter.
  7. Bake for 18-22 minutes, until rolls are puffed, golden brown, and cheese is bubbling.
  8. Let rolls cool for 5 minutes. Brush with remaining melted butter and sprinkle with green onions or parsley, if desired.
  9. Serve warm with ranch or blue cheese dressing for dipping.

Notes

Don’t overfill the rolls to prevent bursting. Chill dough if sticky for easier slicing. Bake on parchment for easy cleanup. Filling can be prepped ahead. For less spice, mix buffalo sauce with ranch or use mild sauce. Rolls can be made ahead, refrigerated, or frozen before baking.
